Mediterranean Cod

I saw a glimpse of this dish in a TV ad for Sainsbury's supermarket, and I thought I'd have a look at it. Fish and seafood would probably be my first choice from any menu, but I don't cook it as often as I'd like.

The fish I used was fresh hake, but any firm white fish would do fine.
 Sainsbury's were promoting their frozen produce, but whether the ingredients are or aren't frozen is neither here nor there.
Not having any of the frozen stuff, I managed to chop an onion and a pepper, mince three cloves of garlic, and open a can of chopped tomatoes. I didn't have any black olives either (Liz says a few chopped Kalamata would do the job) but to lift the sauce a wee bit, I added a small, chopped birds-eye chilli.


Ingredients

  • 1 tbsp olive oil
  • 100g frozen chopped onion
  • 1 tbsp frozen chopped garlic
  • 230g tin Italian chopped tomatoes
  • 1 tbsp tomato purée
  • 200g frozen mixed peppers
  • 400g pack frozen responsibly sourced skinless and boneless cod fillets
  • 50g pitted black olives
  • 1 tbsp frozen chopped parsley
  • 800g pack frozen microwaveable white rice

Teriyaki Tilapia





Ingredients
  • 1 cup brown rice
  • 4 6-ounce tilapia fillets
  • 1/4 cup teriyaki sauce
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup fresh mint leaves
  • 2 scallions, thinly sliced
  • 1 tablespoon fresh lime juice
  • 1 teaspoon crushed red pepper

Directions
  1. Cook the rice according to the package directions.
  2. Heat broiler. Place the tilapia on a baking sheet lined with foil and broil, basting occasionally with the teriyaki sauce, until cooked through, 7 to 9 minutes. Break into pieces.
  3. Meanwhile, in a small bowl, combine the cilantro, mint, scallions, and lime juice. Serve the tilapia over the rice and top with the herb salad and crushed red pepper.

Honey-Soy Broiled Salmon

Ingredients             
  • 1 scallion, minced
  • 2 tablespoon(s) reduced-sodium soy sauce
  • 1 tablespoon(s) rice vinegar
  • 1 tablespoon(s) honey
  • 1 teaspoon(s) minced fresh ginger
  • 1 pound(s) center-cut salmon fillet, skinned (see Tip) and cut into 4 portions
  • 1 teaspoon(s) toasted sesame seeds, (see Tip)

Directions

  1. Whisk scallion, soy sauce, vinegar, honey and ginger in a medium bowl until the honey is dissolved. Place salmon in a sealable plastic bag, add 3 tablespoons of the sauce and refrigerate; let marinate for 15 minutes. Reserve the remaining sauce.
  2. Preheat broiler. Line a small baking pan with foil and coat with cooking spray. Transfer the salmon to the pan, skinned-side down. (Discard the marinade.) Broil the salmon 4 to 6 inches from the heat source until cooked through, 6 to 10 minutes. Drizzle with the reserved sauce and garnish with sesame seeds.

Asian Salmon

Been reading a book called "YOU: On a Diet" as I have recently gotten very excited about working out and eating healthy (no, someone did not hack my account, I'm serious.) This is a recipe from that book that I plan to try next week.


  • 4 skinless salmon fillets (about 4 ounces each)
  • 1 Tbs olive oil
  • 1 garlic clove, pressed or minced
  • 1 Tbs grated fresh ginger root
  • 1 tsp soy sauce
  • 1 tsp maple syrup
  • 2 green onions, chopped


  1. Place salmon in a pie plate or shallow dish. Combine remaining ingredients; mix well.
  2. Pour marinade over salmon ; let stand 15-20 minutes.
  3. Heat a ridged grill pan over medium heat until hot.
  4. Add salmon, discarding marinade; cook 3-4 minutes per side or until salmon is opaque and firm to the touch.
The usual substitutions should be expected... pre-minced garlic in a much larger quantity than specified, pre-minced ginger... and I'll probably use the George Foreman grill as I don't own a ridged grill pan.
